The best thing about home toasted muesli is you can add whatever you want and omit all those things you don’t like that are added to a store bought muesli to pad out the content.
You also end up with a tastier result. While there is some initial pantry-capital-investment coconut oil, nuts etc don’t come cheap) you get a good return once you have made a few batches. I would encourage you to mix up and change the quantities below to suit your taste.
Home Toasted Muesli
Pre-heat oven to 150 degrees c
Combine the following ingredients in a roasting/ baking dish:
3 cups rolled oats
1 cup red quinoa (I like the colour it adds..you could use any quinoa)
1/3 cup chia seeds
1 cup mixed seeds (I used sunflower seeds and pepitas)
1 cup nuts (chopped) eg almonds, hazelnuts, macadamias
1 cup shredded coconut (hint, you can add this later if you want to ensure it doesn’t burn in cooking process)
In a saucepan, gently warm 2 tablespoons of coconut oil (I use unrefined coconut oil) and half a cup of liquid honey.
Stir the liquid through the dry ingredients.
Bake for about 45 minutes (or to your liking), making sure you stir frequently while it is toasting.
Add whatever dried fruit you desire (I use sultanas, dried mango. Cranberries and goji berries also make a nice addition).
