Tamari roasted nuts


Ingredients (Just the 2 + the nuts)

  1. 4 cups mixed nuts (I used a combination of almonds, cashews, macadamias, walnuts and brazil nuts. You could also use just almonds or cashews or any combination)
  2. 1 tablespoon coconut oil
  3. 1 tablespoon tamari*

* Tamari is a milder, darker and  less salty variety of soy sauce.  If you don’t have any to hand you could substitute regular soy sauce.


Preheat the oven to 150 degrees celsius (about 300 f).

Line a large oven tray with baking paper and scatter the nuts on the tray in a single layer.


If your coconut oil isn’t already melted (as mine was today being a hot day) melt the coconut oil in short bursts in the microwave and combine with the tamari.

Pour over the nuts and stir around to distribute.  Add the nuts to the oven and bake for 30 – 35 minutes, checking occasionally to ensure the nuts aren’t burning.

I hold off on seasoning the nuts as the tamari contains salt. However, if you wish you could add herbs and salt and pepper.

Store the nuts in jars or an airtight container and enjoy.
