This is a refreshing, simple 5 ingredient combination that goes down a treat on hot days. Less of a salad and more of a throwing together of ingredients. We had the salad tonight as a side with some grilled prawns for a light, easy Summer meal.
Mix up the proportions based on how much watermelon you use.
Ingredients (to serve 2 – 4 as a side dish)
- Quarter of a Watermelon
- 50 grams (1/4 packet) Good quality feta (I used lemnos brand)
- Juice of 1/2 lemon
- Bunch of fresh mint leaves, torn
- Dash of olive oil
- Generous amount of cracked pepper
Slice the watermelon into long thin pieces on the diagonal (This is how I like them, you can also cut into small cubes if you prefer) and arrange on a serving dish/ salad bowl.
Combine the lemon juice and olive in a jar, shake up and drizzle over the watermelon. Top with crumbled feta, torn mint and crack over a generous amount of black pepper. Drizzle with a little extra olive oil if you wish. Serve and enjoy – would match very nicely with a glass of chilled rose.
